Fitness Friday: How I Make My Favorite Chicken Dish

             Sometimes I get confused about how to cook my chicken. Some chefs say I shouldn’t wash it. Some say I should remove the fat. Some say I should not remove the fat because that will remove the taste also. Phew!! I get exausted just thinking about it. Anyhow, if you are from the Caribbeans like me, you know you have to wash your chicken. We don’t just wash the meat in Haiti; we give the chicken leg quarters a bath. We cut the limes in two, squeeze the juice on the meat, rub the remaining on the meat, then rinse it with water. I am not sure what we are trying to remove (bacteria, maybe!), but the poor bird is already dead; what else can we do to it? Keep reading for my pictorial:-)

  Add enough water and let it cook for 35 to 45 minutes.

Fitness Friday

               All my salads are pre-made. We keep them in the fridge for two days, sometimes three – depending on how tired the lettuce looks. Can’t you tell this is a day three lettuce? This is one of the quickest meals for me, especially after driving back and forth between schools and bus stops, do homework and everything else that we (moms) do under the sun. The little bit of energy that I have left can only make this. It is a very healthy meal, too;  when I don’t add the fried plantains. Please don’t ask me how to make that! I am so bad at measuring and giving directions.

    Oh Nerline! looks so tasty! I don't think there's one way to cooking chicken, i think it'd be so boring, if there were . My quckest meal would be Rice and Goat meat stew as my stomach doesn't consider vegetables filling, even though I threw in chicken or beef. This looks sooo good though 🙂

    Girl I know what you mean lol. Since I'm also from Haiti, I know what the chicken go through before it finally made it to the table. When I'm cooking chicken, I follow online recipes, however; I do wash the chicken with warm water, take the skin off and add lemon sometimes. I don't do it the way that we use to do it back home because I do feel like we are taking all the nutrients out will all the washing and hot boiling water before cooking thing.

    Girl, please let me have a taste of that, it looks soo good. Haha about the washing and washing the chicken poor bird. I do wash my chicken and remove the fat, I normally only deal with chicken breast on a regular basics. I thought that lettuce looked like day 1, fooled me. Happy Fitness Friday 🙂

    Funny! Yes you could but I love more chicken to get a little color (brown-ish) I don't now if the crock pot can do that.

    hahahaha you cracked me up with "we don't just wash the meat in Haiti we give the chicken quarters a bath" looool. I sometimes do the lime thing I was told it was to get rid of the poultry smell and any sliminess in the chicken I have never bothered to research if this is true but I do it anyway. Quick question when you pre make the salad do you store the different veggies together in one container or separately coz the few time I have made salad overnight and stored in one container it ended up being a tad bit soggy the next day.

    Lol to the poor bird joke! Hahahaa…This is such a simple, yet so good healthy food (recipe). I'm all for quick meals, cos food that takes ages to cook just drive my appetite away. lol!! Most often I've grilled chicken with mixed veggies, stir-fry or wraps. Basic hustle-free meals. 🙂
