Fitness Friday:: Easy Spinach and Tomato Salad with Strawberry Preserves Dressing

       
          Hi friends!! As you can see, I am still hooked on spinach. I put it in my scrambled eggs yesterday morning, and I also had it for lunch. I am kind of feeling like Popoye right now.  Spinach is such a healthy vegetable. It has so many health benefits. If you have not done so already, you need to make spinach a big part of your diet. The salad that I made is rich in vitamin C, iron, and fiber. If your iron level is low, Chickpeas have a high iron content. Spinach, tomatoes, and limes are high in vitamin C. Vitamin C is needed when taking an iron supplement because it helps your body to absorb the iron better.

            Making the salad is easy. You just have to wash the spinach and the tomatoes. Cut them up to your liking, and add the chickpeas after draining the water.
           Now for the salad dressing. Add one tablespoon of strawberry preserves to one tablespoon of water. It is healthier if you have fresh strawberries, but they are not required. You would have to put them in the blender with some water and puree. Add 1/2 Tsp of lime juice to the mix, plus less than 1/2 Tsp of extra virgin olive oil, depending on how much oil you want in your dressing. Add salt and pepper to taste (optional). This dressing is for one serving only. Add the dressing to the salad and mix well. Do not add any dressing to your salad if you plan on keeping it in the fridge overnight.
